Detection of Biogenic Amines in Canned Tuna Using a Voltammetric Electronic Tongue

Biogenic amines (BAs), which are produced naturally due to the decomposition of amino acids, crucial for food industry because its formation is directly related improper storage and presence bacteria. High concentrations BAs can be easily with quality spoilage products this sector. The necessity quickly efficiently quantify these targets makes mandatory use alternatives conventional analytical methods used up now. For example, combination sensors chemometric tools (known as electronic tongue) a promising alternative quick informative analysis in Chemometric allow us develop models quantification specific compounds complex matrix, making it feasible tool development more user-friendly than traditional ones. In context, work presents an tongue created detection histamine, cadaverine tyramine using set five modified GEC (graphite epoxy composite) electrodes: ZnO NPs, CuO SnO2 Bi2O3 polypyrrole, voltammetric multisensor array. model was obtained Artificial Neural Network (ANN) 51 input neurons, neurons hidden layer three output layer. functions layers were tansig purelin, respectively. results show slopes near 1 intercepts close 0, indicating feasibility model.
